COMPACTA TOP…AND THE CONFECTIONER IS SERVED! A GUIDE TO ITS SECRETS
¨ Compacta Top is the only machine in the world with which it is possible to make all types of creams, chocolate melt, mousse and other confectioners’ specialities in the freezing bowl.
¨ All that is required is to start the productive cycle by pressing the “START” button in order of the machine to work through the work stages of the confectionery recipes at different temperatures and different stirring speeds. Compacta Top tells us when the cycle has been completed and a temperature of 50°C has been reached (the moment in which the confectioner may have to add certain ingredients).
¨ During the chocolate tempering cycle, for example, Compacta Top autonomously completes a whole work cycle.
The programemes that are set guarantee the best results for three types of chocolate : milk, dark or coloured.
¨ In the top bowl of Compacta Top, a vast variety of products can be made (syrups, topping, fruit sauces, etc.) We are able to set the cooking temperature and time, as if it were an automatic cooker.

CREAM CYCLE (CRE) AN EXAMPLE OF COOKING CONFERCTIONERS’ CUSTARD The Cream Cycle, with CRE displayed on the pushbutton panel, allows an innumerable quantity of recipes to be transformed, from confectioner’s custard to fruit jam. The operator simply has to set the temperature and cooking time values; the machine will automatically do all the rest. The machine is, however, equipped with a preset cycle for the production of confectioners’ custard.
CHOCOLATE MELT CYCLEThe cycle has three subdivision referring to the type of chocolate used (Dark, Milk and Coloured). The operator simply has to press the “START” button on the display and the cycle will be automatically be completed.
